This may come as a shock to a lot of people, but I am not a huge fan of smoothies. It seems like such a hassle to pull out the blender, pull out all the veggies and fruits, plus, you can’t forget about what a pain it is to clean the blender!

The truth is I like to eat. So, I’d rather eat my calories for the day instead of drinking them. Water is typically the only thing I drink (and alcohol on occasion).

Despite my indifference to smoothies, I decide to give one a try at a new, local, healthy, fast food joint Bryn and Dane’s. It was amazingly good. I ended up fighting W over the last sip.

I’m not sure what I was thinking.

Smoothies are great! They are tasty. The toddler loves them. They are easy to consume while juggling a baby and a toddler. Plus, they are a simple way to sneak in a few extra veggies!

After a few more trips back to Bryn and Dane’s, I thought it might be wise to try whipping up my very own delicious green smoothie.

As I have mentioned before, I’m not a huge fan of assembling a whole bunch of ingredients, so this smoothie is fairly simple to put together. No chopping necessary!

Make sure to add the liquid first, then the banana, mangos and spinach, then blend away. I use frozen mangos so it doesn’t need any ice. I’ve also made this smoothie recipe with pineapple too. It’s very refreshing and reminds me of summer. Be sure to rinse out the blender with warm water immediately, so it’s easier to clean. If you are in search of a blender, this one is great. I may have not been a smoothie-lover before, but I certainly am now. My toddler had a wonderful time as my little sous chef in the kitchen. Plus, he sucked his smoothie down faster than you could say, “spinach.”

Coconut Mango Green Smoothie Recipe

Ingredients

  • 1 C coconut milk
  • 1 1/2 C spinach
  • 1 C banana slices
  • 1 C frozen mango chunks
  • a tiny bit of honey *optional

Instructions

  1. Add coconut milk, spinach, banana slices, mango chunks and honey to blender. Blend slowly until desired consistency.
