I’m always tempted to wipe them all over my lips for an au naturel, home-made lipstick. Well, that would be better then getting them all over my hands. Every. single. time I cook with beets I think to myself, I should really put some gloves on, but I never do, and, consequently wound up with red-stained hands.

Raw Apple & Beet Salad with Dijon Vinaigrette Recipe
So, I’ve roasted beets, made beet soup, even added it to hummus, but I was itching to try something new with beets.
Raw!
I’ve never thought to eat beets raw. Can you even do that?
Well, it turns out you can! And, they are absolutely delicious that way. If you are on the fence about eating beets, definitely try them raw. I paired them with my other favorite fall food (apples, of course) for a super simple, but tasty salad. This is the type of salad that tastes even better the next day, so it’s perfect to make in the beginning of the week and enjoy it throughout the week.
I would say it would be great to add to your children’s lunches, but I’m not sure the teachers would be thrilled with beet juice flying everywhere. That being said, both my toddler and soon-to-be toddler (Nooo!) ate this salad right up. My toddler called the beets, special apples.
I put this salad over some fresh arugula, but you really don’t even need it. You probably could also throw in some nuts for a little extra protein.
Ingredients
- 1 large apple or 2 small apples, julienned *you can peel the apple, but I'm lazy so I kept the peel on.
- 2-3 beets, peeled and julienned
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1/2 juice of a lemon
- 1 tbsp dijon mustard
- salt and pepper, to taste
- serve on a bed of spinach and/or arugula
Instructions
- Prepare the apples and beets. Toss them with the rest of the ingredients.
- Keep in the fridge.
I never thought that I would like beets, but my sister, the vegetarian, always orders them at restaurants so I started trying them. I was surprised how much I like beets. This beet salad looks amazing. I am going to have to make it the next time my sister comes for dinner.
