Beets are really fun, versatile and they are delicious during Fall. They have such a beautiful color. I’m always tempted to wipe them all over my lips for an au naturel, home-made lipstick. Well, that would be better then getting them all over my hands. Every. single. time I cook with beets I think to myself, I should really put some gloves on, but I never do, and, consequently wound up with red-stained hands.

Raw Apple & Beet Salad with Dijon Vinaigrette Recipe
I’ve never thought to eat beets raw. Can you even do that?
Well, it turns out you can! And, they are absolutely delicious that way. If you are on the fence about eating beets, definitely try them raw. I paired them with my other favorite fall food (apples, of course) for a super simple, but tasty salad. This is the type of salad that tastes even better the next day, so it’s perfect to make in the beginning of the week and enjoy it throughout the week.
I would say it would be great to add to your children’s lunches, but I’m not sure the teachers would be thrilled with beet juice flying everywhere. That being said, both my toddler and soon-to-be toddler (Nooo!) ate this salad right up. My toddler called the beets, special apples.
I put this salad over some fresh arugula, but you really don’t even need it. You probably could also throw in some nuts for a little extra protein.

- 1 tbsp dijon mustard
