It can be very tough to eat healthy, balanced meals when you are moving.
You are busy packing up your whole life (5 Ways to Make Moving Easier with Baby), kitchen utensils are in boxes scattered on the floor, with a just-turned one-year-old eagerly taking advantage of the disarray- how are you supposed to cook?
Before baby, I would gladly take the week off from cooking to eat out and order in. With W, however, I feel the need to provide my family with nutritious food.
What’s a mama to do?
Fortunately, there are dishes you can simply throw together without rummaging through all of the boxes you just spent the last hour packing.
So, give the pots and pans a break and try out my no-cook, no-bake recipe!
Zucchini, Pepper & White Bean Salad
W loves beans. Luckily, they are good for you and super easy to make. Just toss all the ingredients together and enjoy!

Well, if I don’t feel like cooking, I generally don’t haha. But I usually do, it’s more a desire to use as few dishes as possible that makes me get a little creative. My favorite one pot meal for the fall is just roasted brussel sprouts, sweet and white potatoes, fennel and sausage in a cast iron pan. It’s so good! I also like just making pasta with whatever veggies I have left in the cupboard and a light olive oil and lemon sauce (and capers, I keep those around for just this recipe). Perfect in the summer! Oh, and frittatas with whatever veggies I have are always good to, at least for Jane and I!
Melissa- That’s very true. Although sometimes I have to cook even when I don’t feel like it. I’m going to have to try out your one pot meal. That sounds delicious. I love brussel sprouts.
This recipe looks amazing! I have been looking for a recipe like this all summer. I am so glad I found it on your blog! My go to recipe lately has been so veggie, some noodles, some egg (or meat), and some teriyaki sauce!

We find something we like then I keep making it every week until we get sick of it. We started the summer with hamburgers on the grill, whatever the garden gave us on the side, and Beth’s salsa.
We are now in soup season. You can put anything in broth- fresh, from the freezer, from the pantry. There will be soup on the weekly menu through winter. I think soups are so easy.
Ann Marie- I do that too! haha. I never thought of soup as something easy to make. I am going to have to start doing that more. I love soup!
I used this recipe and adapted it to my ingredients and it was very tasty! A can of black beans: rinsed, green onion: sliced, and shredded zucchini. I used 1tbsp vegetable oil and a couple drops of sesame oil, and black pepper. I really like zucchini shredded like that. The dish went perfectly with the boom boom shrimp wraps I made.
MaryKay- I am going to have to try it with the black beans. They are so yummy. Plus, boom boom shrimp wraps sound amazing!

I love no bake dinners! Thanks so much for sharing this recipe. I’m a fan of throwing together corn tortilla soup: One onion chopped, two cans of black beans, two cans of white beans, a can of corn, a jar of salsa, and a can of pinto beans — all thrown on top of two chicken breasts in the crock pot. Let it all cook together, and then shred the chicken. It’s tasty, and it doesn’t heat up the kitchen.
