We’ve been enjoying a brutal heat wave these past few days. Summer is great and all, but holy humidity it’s hot out there.

It’s quick. It’s tasty. It’s perfectly refreshing for a hot summer day. Plus, it keeps nice in the fridge, so you can enjoy it all week long.
Simple Summer Quinoa Salad Recipe
A few weeks ago, my friend served a delicious quinoa salad that she got from Costco, and it has been on my mind lately. So, I decided to whip up my own since I’m not a member.
I love that you can easily throw whatever you have on hand in this salad. Fresh tomatoes and cucumber from your garden are a great addition!
I realize that this is the second quinoa dish I’m sharing in a row, but I’m totally on a quinoa kick lately. It’s as easy to make as rice, but filled with more nutrients. Plus, it’s such a great base for so many different flavor combinations.
Ingredients
- quinoa
- 1 green pepper, chopped
- 1/2 C cilantro or parsley, chopped
- 1-2 C grape tomatoes, halved
- 1/2 C red onion, chopped
- 1 C cucumber, chopped
- juice of 1/2 a lemon
- 2 tbsp olive oil
- salt and pepper, to taste
Instructions
- Make quinoa as directed from package.
- Toss all ingredients together.
- Serve & enjoy!
- *I keep in the fridge. Best served at room temperature or cold.

This looks YUMMY!!! I cook in the crock pot or griddle most of the summer. We also do a lot of salads and sandwiches too.
