I’m really excited to share this Quinoa Taco Bowl Recipe. It’s super simple and absolutely delicious.

Quinoa is a food people either love or feel meh about it. Most every healthy eating/fitness blogger has whipped up some kind of quinoa recipe or written a post about it’s nutrient-rich goodness. It may or may not be the second, I mean third recipe I’ve shared using this infamous seed. I mean, what’s the deal with quinoa anyway? Is it really all that it’s crack up to be?

Quinoa is a seed, but you can use like any other type of grain, such as rice. That means, it’s easy to throw together on a busy weeknight. It’s also packed with nutrients, including iron, magnesium and fiber, so it’s a better bang for your buck than rice or pasta. Plus, it’s a complete protein, so it’s a great alternative if you are vegetarian or cutting back on your meat intake.

Finally, it has an excellent nutty flavor that’s extremely versatile. You can use it as a side like rice, throw it in a salad, use it in cookies, breads or make this delicious quinoa taco bowl recipe. Now, Good Papa likes to try all my recipes and he eats most anything, but I’d say he was slightly hesitant to try this health-food-looking dish. Once he got a taste; he was completely smitten.

If you are a fan of tacos, this is the dish for you. You can throw in your favorite vegetables. I just used tomatoes, avocado, corn, black beans, onion and cilantro, but peppers would probably taste amazing in this dish as well.

I also went the lazy route and used half a pack of taco seasoning, but you can certainly make your own. I like this one from Pioneer Woman.

Ingredients

  • 1 C quinoa
  • 2 C frozen or fresh corn
  • 1 8 oz. can black beans
  • 1 medium onion, chopped
  • 2 C grape tomatoes, chopped
  • 1-2 avocados, chopped
  • 1/2 C cilantro, chopped
  • 1/2 pack of taco seasonings OR make your own 1 tbsp
  • 1 tbsp butter *optional

Instructions

  1. Make quinoa according to the package instructions. I like to add a tbsp of butter, but that's no required.
  2. While quinoa is cooking, saute onion in a pan over medium to low heat until nice and soft 5-7 minutes.
  3. Add frozen corn and cook until no longer frozen about 4 minutes. Add the black beans and cook 2 more minutes.
  4. When quinoa is finished, mix in onion mixture, tomatoes, avocados, cilantro and taco seasoning.
