I often head over to Pinterest when I’m fresh out of dinner ideas.
It was on one of these occasions that I happened upon this tasty-sounding Chicken Avocado Burger Recipe from Laughing Spatulas. They looked so easy to make, healthy and sounded absolutely delicious (my favorite things in a recipe).
So, I decided put my own spin on them and give them a try.
I really liked that these burgers have avocado in them. W eats most things, but he is shockingly not all that into avocados. They are a great source of healthy fat, so I do like to sneak them into things when I get the chance.
I added some peppers and onions to spice the burgers up a bit (I always like to add more veggies whenever I can).
Top your burger with lettuce and tomato, serve with some super healthy carrot fries (recipe coming soon) and you have yourself one tasty dinner!
Fiesta Chicken Avocado Burger Recipe
I would really love to grill up these fiesta chicken avocado burgers, but it’s not the easiest thing in the dead of winter (especially with a big snow storm looming ahead).
Instead, I used this fabulous Cast Iron Grill Pan my husband received from my brother and sister-in-law for Christmas. It worked perfectly and I love the nice grill marks.
You can just as easily use a sauté pan to cook these bad boys up. If you do use a sauté pan, you could probably just use the same pan you sautéed the peppers and onions in to save you some cleaning.
Ingredients
- 1 lb ground chicken
- 1 avocado, chopped
- 1 jalapeño pepper, minced
- 1 red pepper, minced
- 1/2 small onion
- 1 garlic clove, minced
- salt and pepper, to taste
- about 1 tbsp butter or olive oil
Instructions
- Melt butter or olive oil in a pan. Add minced peppers and onions. Saute until soft about 5-7 minutes.
- Add garlic. Saute for another minute more.
- Combine pepper, onions, garlic in a bowl with avocado and chicken.
- Form patties
- Grill or sauté until cooked all the way through.
- Serve with lettuce and tomato.

This sounds delicious! We’ve just started grounding our own chicken to make burgers and meatballs since we’ve pretty much cut out red meats. Can’t wait to try this recipe.
