Mother’s Day is almost here! Good Papa and I are fortunate that we are so close to both our mothers. We are able to stop by and visit with both in one day.
Good Papa usually takes care of all the cooking/food arrangements on my birthday and Mother’s Day. Since we’ll be out of the house this year, I thought it might be nice to make something in advance so no one has to worry about cooking on that day.
Simple Mother’s Day Pasta Salad Recipe
Pasta salad is the perfect, simple dish to make ahead. You can really throw whatever you want in there, and it gets better the longer it sits. It’s also a great way to sneak in some extra veggies.
This is a Mother’s Day post, so I thought I’d text my own mother to see if she had any ideas for what to add in my pasta salad recipe. She sent me her easy, Greek-style recipe and I whipped it up the next day. Yum!

Ingredients
- 1 small cucumber, diced
- 1 head of broccoli, chopped
- 1 pint grape or cheery tomatoes, chopped
- 1 pint mushrooms, chopped
- 1 orange pepper, chopped
- 1 yellow pepper, chopped
- 1 cup black olives
- 1 cup crumbled feta cheese
- *You can add more or less veggies depending on your taste
- 1 lb pasta, I used whole wheat rotini
- Dressing
- 1/2 cup olive oil
- juice from 3 lemons
- 2 cloves garlic, minced
- 1-2 tbsp oregano
Instructions
- Bring a large pot of water to a boil. Add pasta and cook for desired time listed on the box.
- While pasta is cooking, chop veggies and whisk dressing together.
- Combine ingredients.
- Store in fridge.

I love pasta salads. It looks like it can be vegan, too. (Without the feta.) I make a ton of veggie grain salads using rice pasta, farro and quinoa. This looks delish. I’m pinning.

So far I have no plans – yet – for Mother’s Day. I’m hoping it includes yummy food that someone else cooked.
