Since I am more than halfway through my pregnancy, the time has come (this Friday!) to find out the baby’s gender. I’m too impatient to wait until the baby is born to find out. Plus, the teacher in me has a desire to be prepared and have a plan.
It’ll be a surprise either way. We’ll just be surprised a little earlier.
It seems the gender reveal party is the new trend. It’s fun to see all of the creative ways people reveal their baby’s gender. And, I love the pictures of all the yummy, beautiful blue and pink foods.
We aren’t doing a gender reveal party, but if we were to do one I would definitely put this Strawberry Blueberry Goat Cheese Salad recipe on the menu. A fabulous restaurant near us has something similar on the menu, so I had to make it at home. It’s such a light, yummy salad perfect for the hot summer months. The colors are so pretty whether or not you use it at your gender reveal party.
Strawberry & Blueberry Goat Cheese Salad Recipe
A lot of people have been asking whether I have an inkling if it’ll be a boy or a girl. I don’t believe in any of those Old Wives’ Tales for gender (even if they are fun to try out), but I am pretty positive this baby is another boy.
I’m not sure if it’s because I already have a boy or because I have three brothers or if it’s just mother’s intuition. If I go through all the Old Wives’ Tales for gender prediction, it looks like boy comes out on top.
I haven’t had much morning sickness.
I have been craving sweet stuff.
I’ve been pretty happy and calm.
The Chinese Gender Prediction calendar says boy.
I’ve been sleeping on my left side.
I think I’ve been carrying high, but who can tell at this point really?
I’ve had a few headaches. Does that count for boy?
The Mayan Gender Calendar says boy.
Either way- boy or girl- we will be very happy. Just like we will happily eat this salad with both blueberries and strawberries!
Ingredients
- 6 C blend of arugula and spinach
- 1 C blueberries
- 1 C strawberries, sliced
- 1/2 C crumbled goat cheese
- 1/2 C chopped pecans, walnut or almonds *whether nut you prefer
- 3/4 C olive oil
- 1/4 C champagne or white wine vinegar
- 2 1/2 tbsp freshly squeezed orange juice
- 2 1/2 tbsp lemon juice
- 1 tsp shallot, minced
- 1 garlic clove, minced
- salt and pepper to taste
Instructions
- Wash ingredients and combine in a large bowl.
- Whisk together dressing.
- Add dressing as needed.
