Shredded Brussels Sprouts and Mushrooms Recipe

It has been ten weeks since we’ve added our little Sweet P into the mix. Life with two has been an adjustment for sure!

There are some days I feel like a rockstar. Those are the days I get both kids out the door to a playgroup, serve up a healthy lunch and down for naps at the same time. It takes every ounce of willpower that I have not to jump up and down like Rocky when I successfully get them to nap at the same time.

Then there are the other days…

Days like today. Days where I promise W a cookie, a movie, ANYTHING if he would just TAKE A NAP. Days where I’m shuffling back and forth between the toddler and the baby desperately trying to get at least one of them to shut their eyes.  If you recall, both of my kids suffer from FOMO

Well, on these types of days cooking is the last thing on my mind. It would be nice if I had someone to buy all my food for me, cook it, feed it to me, then tuck me into bed. Want to trade places, Sweet P? 

So, I’m thrilled when I stumble upon a super simple, healthy, tasty recipe. I made this Shredded Brussels Sprouts and Mushroom Recipe along side my Sauteed Chicken with Orange Sauce recipe up at my parents’ house.

Shredded Brussels Sprouts and Mushrooms Recipe

Pure laziness is what sparked this idea. I saw shredded brussels sprouts and decided they would taste yummy with some mushrooms. Fortunately, they were super tasty together.

My parents liked the dish so much I decided to make it again and share it with you. Since there were no shredded brussels sprouts the second time I ran to the store, I took a deep breath, bought brussels sprouts whole and spent a long, grueling 2 minutes shredding them myself.

Seriously, this dish is SO simple.

Shredded Brussels Sprouts and Mushrooms Recipe

Ingredients

  • about 3 C shredded brussels sprouts
  • about 1/2 lb chopped mushrooms
  • salt and pepper, to taste
  • 2 tbsp butter *I used Earth Balance butter since I am currently giving up dairy/soy while breastfeeding

Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add mushrooms and saute for about 2-3 minutes.
  3. Add brussels sprouts and continue to cook for about 4 more minutes.
  4. Add salt and pepper.
  5. Enjoy!
