Father’s Day is coming up (only a week away!), so I thought I’d share one of Good Papa’s favorite recipes. I am extremely fortunate that Good Papa not only cooks from time to time, but actually enjoys doing it. If only he enjoyed the clean-up process.
I typically handle cooking duties during the week since he works all day, but he likes to play Top Chief on the weekends. His specialities include ribs, grilled chicken wings, steak, burgers, tacos … we eat a lot of meat on the weekends.
As much as I love all that protein, my favorite meal, hands-down that Good Papa makes is brunch. On the weekends, we go all out for brunch. Just ask my mom and dad who have curiously taken up the habit of dropping by around 11:00 am Sunday morning. Yes, there’s always bacon or sausage, but there’s also eggs, sometimes pancakes or french toast, and my favorite- smoked salmon on a bagel with cream cheese, cucumber, tomato and red onion.
Good Papa introduced this dish to me when we first started dating and it has become my ultimate brunch, or anytime really, food item. It’s so simple, such a perfect combination of flavors and it makes you feel slightly less guilty about eating a bagel with cream cheese.
Smoked Salmon with Veggie Cream Cheese Recipe
Now, we typically top our bagels with plain cream cheese. I thought it might be fun, and a great way to sneak in some extra veggies, to mix things up with a homemade flavored cream cheese recipe.
It only takes a few more minutes to combine the room temperature cream cheese with some chopped veggies and it’s well worth it. Seriously, this stuff would taste good on a cracker or even a cucumber.
All that’s left is to toast those bad boys up and top with some sliced cucumber, red onion, tomato and smoked salmon. And, there you have it! A simple Father’s Day brunch idea that dad will love. You can even get your kids in on the action by having them help assemble the sandwiches or mix the cream cheese.
Ingredients
- 8 oz. cream cheese, softened to room temperature
- 1/4 C shredded carrots
- 1/4 C diced celery
- 1/4 C shredded radishes
- 1 Tbsp shallots, diced
- Bagels *we prefer everything bagels
- A few slices of cucumber
- A few slices of tomato
- A few slices of red onion
- A few slices of smoked salmon
Instructions
- Combine cream cheese ingredients.
- Spread veggie cream cheese on a toasted bagel.
- Top with smoked salmon, sliced cucumber, sliced red onion and sliced tomato.

This stuff looks delicious (and healthy!). I believe that the same food made at home can be way better for you than if you buy it pre-made at a store! An additional benefit is that you can customize it to your and your family taste (like you’ve done here). Great recipe!
