If you’re a pinterest fan, you may have come across these crazy 2-ingredient pancakes, made with just eggs and a banana. They kept popping up in my feed, but I brushed them off.
I mean, there’s no way a few eggs and a banana could somehow magically come together to form a delicious pancake. Pancakes are one of the reasons why breakfast is my favorite meal of the day. How could someone try to pass off a few eggs and a smashed up banana as yummy pancake goodness?
It wasn’t until someone recommended trying the recipe in my Healthy Active Mamas Facebook group that I caved and decided to give it a try.
3-Ingredient Strawberry Pancakes Recipe
Well, what do you know? These things are shockingly really good. They have a slightly banana taste, but they taste so much like pancakes. I could not believe it!
Since Valentine’s Day is coming up, I thought it would be festive to add some strawberries. Plus, strawberries + bananas are a perfect match!
The key to these pancakes, is to keep them on the smaller side and don’t cook for too long. Be careful when flipping- they have a slightly different consistency than regular pancakes. There are tons of 2-ingredient pancake recipes on pinterest, but I thought the Kitchn described the recipe really well.
I can’t wait to make these pancakes again. You could mix it up and add a little bit of cinnamon or blueberries or even chocolate chips. The best thing about these pancakes, besides the fact that they taste good, is that they take 5 minutes to make! Let me repeat that…. they only take 5 minutes to make. Seriously, these 3-ingredient strawberry pancakes are a perfect, nutritious breakfast to whip up on busy mornings.
Ingredients
- 1 ripe banana
- 2 eggs
- 5-6 strawberries, chopped
- about 2 tbsp butter, oil for greasing the pan
Instructions
- Mash banana with a fork in a medium-sized bowl.
- Whisk eggs separately.
- Pour eggs over banana and mix.
- Melt butter (you could use vegetable or coconut oil too) in pan over medium-high heat.
- Pour small amounts of batter in pan. Scatter strawberries on top. Heat for about a minute or two before flipping to the other side. Let cook a minute more.
